Power failure

In the event of a power failure, food handlers can do several things to ensure food safety and reduce wastage.

  • Transfer frozen food to another location to ensure it is kept cold.
  • Only open the fridge or freezer doors when absolutely necessary - this will keep the food and air temperature colder for longer.
  • If you expect the power failure to last more than an hour, where possible, place bags of ice under food packages and trays stored in fridges and freezers.
  • Place an insulating blanket over cold or frozen food where possible.
  • Once cold or frozen food reaches 5-C or above, the food can be kept and eaten within four hours. After four hours, the food must be discarded. 
  • If you have hot food, eat it within four hours of it being hot or throw it away.
  • If power is restored when frozen food is still cold to touch, less than 5-C, the food is safe to refreeze.
